Sweet Spicy and Tangy Red Cabbage Slaw – Sprig

Ready in 20 mins

Ingredients

For the Salad

  • 1 small head red cabbage, shredded
  • 2 large carrots, shredded
  • 4 Spring onions whole, thinly sliced.

For the Dressing

  • 1 tablespoon Tarmarind Pulp
  • 1 garlic clove, minced
  • 2 tbsp Sprig Toasted Sesame Oil
  • 1 tbsp light Olive Oil
  • 2 tbsp Mayonnaise
  • 1/4 cup Sprig Coconut Palm Sugar
  • 1 tsp Sprig Habanero Sauce
  • Salt and pepper, to taste
  • chopped fresh parsley, for garnish

Instructions

  • Place shredded cabbage, carrots and green onions in a large salad bowl. Set aside.
  • In a mixing bowl, whisk together coconut palm sugar and olive oil, whisk until the coconut palm sugar is dissolved completely. Add the tamarind pulp and whisk again. Then add the remaining ingredients for dressing; whisk until well combined.
  • Pour dressing over the cabbage mixture and toss to combine.
  • Taste for seasonings and adjust accordingly.
  • Place in the refrigerator for 15 minutes.
  • Remove from fridge and garnish with chopped parsley and Serve.

Turkish Chicken Burger – Sprig

Yield: Serves 2 Prep time: 20 mins

Cooking time: 15 mins

Ingredients

  • 2 chicken breasts, boneless and skinless
  • 2 tbsp Sprig Tangier
  • ½ cup all purpose flour
  • 2 eggs
  • 1 tsp pepper
  • Salt as per taste
  • 1 tbsp oil
  • 2 burger buns

Yogurt spread

  • 1 cup hung curd
  • 1 tbsp extra virgin olive oil
  • 6 garlic clove
  • 1 tbsp mint leaves chopped
  • 1 tbsp crushed red pepper
  • 1 tsp lemon juice
  • ½ cup baby spinach

Directions

  • To prepare tangier spiced chicken breast
  • Season the chicken with a little salt, pepper and 1 tbsp spice powder for 15 min
  • In a bowl break the egg and whisk once
  • Put the flour into a bowl. Season with salt and 1 tbsp Tangier spice powder
  • Dip each chicken piece in the egg, draining off any excess before dipping into the flour mixture
  • In a pan heat oil and shallow fry on both sides till they are done

Turkish yogurt spread

  • In a bowl add finely minced garlic with olive oil and lemon juice. Mix it well
  • Finely chopped baby spinach and add to the bowl
  • Add hung curd, crushed red pepper and mix well. Adjust salt
  • Take one burger bun and spread the dip. Place one chicken breast .add some tomato slices if you want
  • Serve immediately

Coconut Sugar mingled with a Quartet of Brown Spices – Sprig

A slight hint of caramel, mixed with warm spices, defines this gourmet sugar which can be used as well in traditional Indian cooking as it can be in international cuisine. Sprinkle some of this sugar onto simply baked apples and caramel sauce to open a treasure trove of new flavours. Experiment with savoury creations like Teriyaki chicken wings and Thai Soups.

Usage: Sprinkle 1 teaspoon into coffee or tea or on your cereal/fruits during breakfast. Add to food only in small amounts (usually 1 – 2 teaspoons per batch of batter, dough etc).
