Dulce de Leche with Vanilla – Sprig

Dulce de leche is a confection prepared by slowly heating sweetened milk to create a substance that derives a different taste, changing flavour and colour. This Spanish name, literally translated, means ‘candy made of milk’. It is the magic ingredient in many recipes in Argentina – chocotorta (a cake made of layered chocolate biscuits and dulce de leche), alfajores (biscuit sandwiches of dulce de leche), ice cream, crepes, cakes, and muffins.

How is dulce de leche different from caramel?
Caramel is melted sugar (caramelized) which turns shades of brown. You can then add milk for a creme caramel. Dulce de Leche has, as its base, heated sweetened milk. Cooked down, it tastes just like or nearly like caramel with milk added.

Lavender and Adobado Flavoured Cabbage Roll stuffed with Black Rice, Chicken and Mushrooms – Sprig

 Ingredients

Directions

  • Soak the black rice overnight or 6hrs atleast.
  • In a medium saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • Bring a large, wide saucepan of lightly salted water to a boil. Add cabbage leaves and cook for 2 to 4 minutes or until softened; drain.
  • Boil the tomatoes until the skin peels off. Blend it to a fine puree.
  • Heat oil in a Pan. Sauté garlic and chillies. Add the tomato puree, salt and 1 tbsp of grated ginger. Add 1cup of water and bring to a boil. Add the Chipotle Adobado Sauce and Lavender Extract. Simmer for another 2 mins. Adjust seasonings.
  • In a medium mixing bowl, combine the Sesame Oil, chicken, cooked rice, 1tbsp ginger, onion, egg, mushrooms salt and pepper. Mix thoroughly.
  • Divide the mixture evenly among the cabbage leaves. Roll and secure them with toothpicks or string.
  • In a large skillet over medium heat, place the half of the tomato puree at the bottom, followed by the cabbage rolls and pour the remaining tomato gravy over the top.
  • Cover and bring to a boil. Reduce heat to low and simmer for about 40 minutes, stirring and basting with the liquid often and Serve hot.

Ginger Pumpkin muffins served with Coconut Ginger Sauce – Sprig

Ingredients

For Muffin, Makes 12 muffins

  • 300gms of very thinly sliced Pumpkin, should be enough to make 2 cups of puree after baking.
  • 2 tbsp Ginger Grated
  • 3 cups all-purpose flour
  • 1 tsp of Sprig All Natural Bourbon Vanilla Extract.
  • 2 cups of Sprig Cinnamon Imbued Honey.
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons ground nutmeg
  • 1 teaspoon ground allspice
  • 1 teaspoon salt
  • 2/3 cup vegetable oil
  • 3 eggs

For Sauce

  • 3 cups of Coconut Milk
  • 4 tbsp Jar Of Coconut and Ginger Love.

Directions

  • Preheat oven to 250 degrees.
  • Place the Pumpkin slices on a baking sheet. Sprinkle some salt. Cover with foil and bake in preheated oven until tender, about 20 minutes.
  • Puree it in blender. Measure out 2 cups pumpkin puree; set aside.
  • In a large bowl, stir together flour, baking soda, baking powder, nutmeg, allspice and salt.
  • In a separate bowl, add the vanilla extract. Beat together 2 cups pumpkin puree, grated ginger, honey, vegetable oil and eggs.
  • Stir pumpkin mixture into flour mixture until smooth.
  • Grease muffin cups or line with paper muffin liners
  • Scoop batter into prepared muffin cups.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the centre of a muffin comes out clean.

 For Sauce

  • Take a thick bottomed pan and reduce the coconut milk into half.
  • Add the Coconut ginger spread. Stir to form a homogenous mix.
  • Spread this Sauce over the Muffins and Serve hot.

Passion Fruit Malagueta – Sprig

Malagueta pepper is a type of chili widely used in Brazil, Portugal, and Mozambique and also used throughout the Caribbean. It is a small, tapered, green pepper that turns red as it matures at about 5 cm in length. It has a heat range of 60,000 to 100,000 Scoville units. Sauces made with malagueta pepper is commonly available as a condiment in restaurants throughout South America. Combined with passionfruit, which is native to southern Brazil, Argentina and Paraguay, we get a distinctive hot and sweet sauce. This sauce can be used in combination with other elements like butter or stock to make a pouring sauce for baked fish, chicken and other meat. It can even be used as a salad dressing, dipping sauce for fritters or as a light drizzle over exotic cut fruits.

Chicken Gyoza/Chinese potstickers with Passion Fruit Malageuta Sauce – Sprig

Ingredients
For 20 Gyoza

  • 300gms ground chicken
  • 1/2 head iceberg lettuce, shredded
  • 1 egg
  • 3 spring onions bulbs, thinly sliced
  • 1 piece fresh ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon Passion Fruit Malageuta Sauce, or more to taste
  • 1 small clove garlic, minced
  • 1 teaspoon Sprigs Toasted Sesame Oil
  • 20 Gyoza wrappers, or as needed
  • 1 tablespoon vegetable oil, or as needed
  • 1 cup water

Dipping Sauce:

Directions

  1. Combine ground chicken cabbage, egg, green onions, ginger, 1 tablespoon soy sauce, 1 tablespoon Passion Fruit Malageuta sauce, garlic, and 1 teaspoon Toasted Sesame in a bowl.
  2. Place 1 teaspoon of chicken mixture in the middle of each Gyoza wrapper. Wet edges with your finger or a brush. Fold up sides to form a semicircle; pinch edges to seal.
  3. Heat oil in a heavy skillet over medium-high heat. Add 12 to 15 gyoza to the skillet. Cook until golden brown on the bottom, about 2 minutes.
  4. Pour in 1/2 cup water; cover and cook until water is absorbed, 5 to 7 minutes. Repeat with remaining gyoza.
  5. Mix 2 tablespoons soy sauce, rice vinegar, 1 1/2 teaspoon Sprigs Toasted Sesame and ½ teaspoons Passion Fruit Malageuta sauce together to make dipping sauce. Serve dipping side alongside gyoza.
